      <description>We continue our Belfast Uncovered series this week with Charlotte Dryden the CEO of the Oh Yeah Music Centre.  Charlotte has been involved in music from an early age and in May 2007, The Oh Yeah arrived in the Cathedral Quarter with a massive open day which welcomed hundreds of music lovers and featured a world-class line-up of performances, including a set by the Centre’s co-founder and champion, Gary Lightbody.  Belfast was awarded the prestigious Unesco City of Music Award in 2021.  Charlotte explains on the programme - &#13;
“We kind of do everything from talent development through to community engagement and inspiring young people through music, to showcasing the best of Belfast through either Women’s Work or the Sound of Belfast festival or NI Music Prize through to tourism and celebrating the story and the heritage of music from here.”  The Oh Yeah houses the incredible NI Music Exhibition on its ground floor, which features timelines and artefacts telling the stories of artists from Ruby Murray to Van Morrison to Gary Moore to the Good Vibrations record label. The building itself was already a piece of music history, as it was home to Billy McBurney’s Outlet Records prior to being reborn as the Oh Yeah.       <description>The Belfast Giants made history in 2000, becoming the first professional ice hockey team on the island of Ireland. After three months on the road, the team took to the ice in Belfast for the first time that December. Their momentous sell-out opening night captured the hearts of an entire nation and started an ice hockey phenomenon that remains today.  As a former player and coach and a Canadian living in Belfast, Steve Thornton has seen great change in Belfast and has been integral to growing the game of ice hockey there.  When he first came to Belfast ‘back in the day’ reinforcing safety was important against a backdrop of what people would have seen and heard about Belfast on the news etc. Nowadays that hardly ever comes up and Belfast today has a great reputation as a leading tourist destination.   Steve has come to really love "The uniqueness of Belfast" – wrapped by mountains and the sea, with stunning places all easily accessible within a stone’s throw of the city"&#13;

"Back in 2000 Ed, a lot of people said ice hockey ‘would never last’ in Northern Ireland. Almost 22 years on, ice hockey is now one of the largest mainstream sports in Northern Ireland - Last Wednesday night we had over 7,000 people in The SSE Arena for the Challenge Cup Final.  We expect to have our highest audience numbers on record at the end of this season.&#13;

      <description>In this week's special Christmas Show my guest is classical Irish soprano Margaret Keys.&#13;
Born in Derry, Northern Ireland her passion for music took hold at a young age, she has been singing since she was four.  Her talent quickly became clear and she was already being marked out for success by some of the leading conservatoires and music professionals.&#13;

At the tender age of 15 she was awarded the Trinity College Of London Gold medal for the best overall performer in the graded examinations.  Margaret won a scholarship to complete her vocal training at the prestigious Royal Scottish Conservatoire of Music and Drama. She graduated with a Masters in vocal performance having already gained a First Class Honours Degree in Music Education.&#13;
&#13;
Since graduating Margaret’s career has continued to rise.  She signed a recording contract with Universal Records Australia and has been hailed as a unique find:  “Every once in a while an artist makes you feel truly humbled. Margaret Keys is one of those artists. She has a voice of pure warmth and beauty. I know the world will fall in love with Margaret." (Universal Records CEO)&#13;

Margaret has performed extensively throughout the world and has performed with some of the world’s leading orchestras and performers.  She has performed to an audience of 35,000 in a special International Lakeside Proms concert and was one of the chosen artists from throughout the World, which also included Andrea Bocelli and Aretha Franklin, to perform for Pope Francis in a special concert for his visit to the USA in 2015. The concert was broadcast worldwide to an audience of 1.5million.&#13;

She has also performed on several TV broadcasts including BBC Songs of Praise, The BBC Proms and on PBS American TV specials.  Margaret has performed with West End star Alfie Boe, Russell Watson, Paul Potts and was special guest to the multi- platinum selling The Fron Male Voice Choir in their recent tour to New York City and in their UK tour.  She made her debut in the Royal Albert Hall in December 2015  in “Christmas with stars” which was produced by BBC Radio 2 and the TV Times. Following this performance She was subsequently invited back to perform again in the Royal Albert Hall Christmas Concert Special in 2016.  She was highly honoured to perform for HRH Prince of Wales Foundation Concert for Children and Arts, which was aired to an audience of 5million on Classic Fm and Sky Arts.&#13;

Margaret’s high-profile performances have made a great impact on the world of classical music and thus prompted her appointment as the only Irish Ambassador for HRH Prince Of Wales Foundation for Children and Arts. This is especially important to Margaret as she is a proud supporter of arts having a positive impact on young people. Margaret released her highly anticipated album "The Gift of Music" in June 2018.       <description>When Paul Carroll's parents Joyce and John took over Ghan House in the early 1990s, the Georgian mansion on the edge of Carlingford was in a run-down state.  The house was built in 1727 by William Stannus, a politician from Dublin. Two tunnels once ran from the kitchen into the centre of the town. Monks used to bake bread here and deliver it through the tunnel.&#13;
&#13;
The Carrolls carefully restored the house, keeping its unusual early Georgian features. They turned it into a cookery school, restaurant and elegant guest house, which has been garlanded with accolades.  After working as a corporate photographer, Paul came back to Carlingford to help his mother run the restaurant and guest house. He does not regret his change of career.&#13;

      <description>Michelin Star-winning chef Ross Lewis has served up his last dish at Dublin’s Chapter One restaurant after 29 years.  Ross has handed over the apron at the well known restaurant to two-star Michelin chef Mickael Viljanen.  Lewis said words could not “describe the journey I have been on” but said that he felt it needed a fresh energy now to go forward.  The pandemic gave him time to reflect on his career and felt it was the right time to step away.&#13;

      <content:encoded><![CDATA[<p style="padding:0px"><span style="font-size:16px;">Michelin Star-winning chef Ross Lewis has served up his last dish at Dublin&rsquo;s&nbsp;Chapter One restaurant after 29 years.&nbsp;&nbsp;Ross has handed over the apron at the well known restaurant&nbsp;to two-star Michelin chef Mickael Viljanen.&nbsp; Lewis said words could not &ldquo;describe the journey I have been on&rdquo; but said that he felt it needed a fresh energy now to go forward.&nbsp;&nbsp;The pandemic gave him time to reflect on his career and felt it was the right time to step away.</span></p>

After spending time in London and Switzerland, Aidan had the experience to present a culinary standard that was rare in 1970s Ireland. “I had been working in La Fregate in Guernsey and decided to model my own restaurant on that.  Essentially, what King Sitric is offering, says Declan, is “lobster with no shortcuts. When he bought the dilapidated building that was to become The Merchant Hotel, the Tourist Board advised him that Belfast wasn’t ready for a hotel of such splendour. Now, it’s championed as one of the great hotels of the world….  Recently Bill's Belfast-based Beannchor Group has been granted planning approval to build its first hotel in Dublin.  The €30 million (£25.6m) project will redevelop the Victorian-era Boland’s bakery and biscuit factory off Dublin’s Capel Street into an eight-storey 98-bedroom hotel.    </description>

John Healy first discovered his love of the hospitality sector when he took a summer job in the 80's working as a bar and waiter in The Lord Bagenal Inn in Loughlinbridge, Co Carlow. He also worked as a cocktail waiter in the Town House Hotel in his native Naas, Co Kildare which led to a course in Hotel Management &amp; Business Studies in the Dublin College of Catering at Cathal Brugha Street.&#13;

John has worked at every level of the hospitality business on his route to the top. He has been a luggage porter, room service waiter and attendant. During a spell in Paris, at La Ferme Irlandaise, under the guidance of Myrtle Allen, he washed pots and pans until he mastered the French language. After a move to London, John worked at the Rib Room restaurant in the Carlton Towers on Sloane Street. This old school famous London eatery was a haunt of thespians and aristocrats alike.&#13;
&#13;
John's next move saw him take on the role of manager at Europe's largest freestanding restaurant, Mezzo, which was designed and owned by Sir Terence Conran. Five years on and John was ready to return to Ireland to take the reins at Dublin's newest 5-star hotel, The Four Seasons. While working in the Hotel John built up a reputation of loyal customers and he became the face of the Four Seasons Dublin.&#13;

John has worked in corporate management consultancy, advising managers about the importance of personal image, people skills and social etiquette. He also teaches what he has mastered in his career - how to handle every situation at every social occasion, without batting an eyelid.&#13;

The past decade has seen huge positive changes in Tourism to Northern Ireland and this has resulted in a huge growth in the number of people now visiting. Fiona tells about the small steps that have been taken to deliver a "Giant Experience" to visitors today, from Titanic Belfast to Derry Girls, from Game of Thrones to the Mourne Mountain's.  Belfast of today can compete with any European city, from its' Michelin star restaurants to its lively bohemian buzz.  NI now plays host to top international events from the MTV music awards back in 2011, The Giro d’Italia Grande Partenza cycle race in 2014 to the 148th Open golf championship last year.  Fiona also gives listeners some great local tips on what to see and do when you head to NI on a Staycation and she tells us about the friendliness of the people and the real value for money to be had there today.</description>

Kevin started his career in Dublin in a restaurant called The Old Schoolhouse and continued his studies at Dublin College of Catering where he graduated in 1986.
